6 Medium Potatoes
1 medium onion, chopped
2 tsp salt
4 TB butter
½ cup flour
3 ½ cup milk
1 ¼ tsp salt
⅛ tsp black pepper
1 ½ cups grated Cheddar Cheese

Directions:
Directions:
Peel potatoes and cut into bite-size pieces. In saucepan, mix potatoes with onion, and salt and cover with water. Bring to boil. Turn off heat, and let set for 5 minutes. Drain and spread potatoes in 9x13 baking pan. Make a white sauce by melting butter in saucepan. Stir in flour to make a roux. Add milk, salt and pepper. Stir and cook until thickened. Mix in grated cheese. Pour over potatoes. Top with remaining cheese. Bake at 350º, for 35 to 40 minutes.
