1 10 inch pastry shell
4 cups cut up fresh vegetables (carrots, cauliflower, zucchini, broccoli)
½ cup diced roma tomatoes
¼ cup chopped green onions
1 ½ cups grated Swiss cheese
4 eggs
1 cup half and half
½ cup sour cream
1 tsp salt
¼ tsp black pepper
¼ tsp oregano
½ tsp baking powder

Directions:

Preheat oven to 400º. Bake pastry shell for 10 minutes. Remove from oven. Reset oven to 325º. Blanch vegetables in a small amount of water till tender crisp. Drain and pour into bottom of pastry shell. Sprinkle with grated Swiss cheese. Beat together, eggs, half and half, sour cream, salt, pepper, oregano, and baking powder. Pour over vegetables and cheese. Bake for 40 minutes.
