½ cup sugar
6 tbsp. butter
1 egg yolk, well beaten
1 cup crushed pineapple, well-drained
½ cup chopped pecan nuts
1 egg white, beaten stiff
1/8 tsp. salt
3 large vanilla wafers
1 cup whipped cream

Directions:
Directions:
Cream sugar and butter, add egg yolk well beaten and crushed pineapple and chopped nuts. Beat 1 egg white until stiff. Add salt to egg white, then fold into other mixture. Take 3 vanilla wafers and spread mixture in between, but not on top. Let stand in refrigerator for 4 hours or overnight. Whip whipping cream and spread on sides and top of wafers, then sprinkle with coconut and let stand in refrigerator 3 hours or more. Top with cream.
