1 ½ pounds fresh broccoli or 2 10 oz pakages frozen chopped broccoli
3 TB Butter
¼ cup chopped yellow onion
3 TB Flour
2 cups Chicken Broth or 2 cups water and 2 TB Chicken Bouillon
2 cups half and half
1 tsp salt
¼ tsp nutmeg
1 cup Grated Cheddar Cheese

Directions:
Directions:
Wash and chop broccoli. Cook in small amount of salted water till tender. Melt butter in heavy pot. Add onion and saute' till clear. Stir in flour to make a roux. Slowly add broth and cream stirring so the soup thickens but is not lumpy. Add salt, nutmeg and cooked broccoli. Just before serving add cheese.
