½ cup tapioca - (Bascoms is best)
3 cup milk
¼ teaspoon salt
½ cup sugar
2 eggs - (separate white from yoke)
½ teaspoon vanilla

Directions:
Directions:
Soak tapioca in ½ cup milk overnight in a 2-quart saucepan; leave in refrigerator. In morning, add remaining 2½ cups of milk and salt. Bring to boil. Add sugar slowly and reduce to low heat and let simmer for 5 minutes.
Beat egg yokes in large bowl until smooth. VERY gradually add hot tapioca mixture to eggs stirring carefully, so as not to curdle. Return mixture to saucepan. Bring to boil stirring constantly. Reduce heat and cook for 3 minutes. Remove from heat and add hot mixture slowly to beaten egg whites. (Do not over beat the egg whites.) Add vanilla.
Serve warm or chilled. Garnish with whipped cream and/or fruit.
