½ cup Soft Butter
¼ cup Powdered Sugar
1 cup Flour

Filling:
2 eggs
1 cup sugar
2 TB Flour
2 TB Lemon Juice
Grated rind of ½ Lemon

Directions:
Directions:
Preheat oven to 325º. Cream butter and sugar together for crust. Add flour to this and spread into a 8X8 pan and bake at 325º for 15 to17 minutes. While crust is baking prepare filling.

Beat eggs slightly and add sugar, flour, lemon juice, and zest. Mix well and pore over hot crust after it comes from the oven. Bake for 15 to 20 minutes at 325º. Remove from oven and cool for 5 minutes. Sprinkle with powdered sugar. Cool completely before cutting. If you double the recipe it will fit in a 10X15 jelly roll pan.
