½ cup mayonnaise
½ cup sour cream
1 teaspoon white pepper
1 teaspoon kosher salt
4 oz. Snow peas - bud and strings removed
3½ pound frozen baby peas - thawed, not cooked
3 oz. Bacon - cooked crisp and chopped
5 oz. Water chestnuts, sliced
2½ oz. Red onion, diced

Directions:

Blend together mayo, sour cream, white pepper and salt. Combine snow peas, baby
peas, water chestnuts, bacon and red onion with dressing until ingredients are well
coated.
Refrigerate at least 24 hours before serving.
Stir twice each day to redistribute dressing. Peas must be thawed naturally - slow thaw by refrigeration is best, put peas on paper towels to get ride of excess water - water will
dilute the dressing.
