1 ¼ c graham cracker crumbs
2 T sugar
4 T butter, melted
2 (8-oz) packages plus 1 (3-oz) package cream cheese, softened
1 c sugar
2 t grated lemon peel
3 eggs

Directions:
Directions:
Preheat oven to 350 deg F. Stir together crumbs and sugar. Mix in butter thoroughly. Press mixture evenly in bottom of 9-inch springform pan. Bake 10 minutes. Cool.

Reduce oven temperature to 300 deg F. Beat cream cheese in large mixer bowl. Gradually add 1 c sugar, beating until fluffy. Add lemon peel. Beat in eggs, one at a time. Pour over crumb mixture. Bake 1 hour or until center is firm. Cool to room temperature. Spread with glaze. Chill at least 3 hours. Loosen edge of cheesecake with knife before removing side of pan.
 

Strawberry Glaze

Puree enough strawberries to measure 1 cup. Blend 1 c sugar and 3 T cornstarch in a small saucepan. Stir in 1/3 c water and the strawberries. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Cool thoroughly.
