1 cup water
2½ tbsp. sugar
½ tsp. salt
2 tbsp. vegetable oil
1 cup all-purpose flour
1 qt. oil for frying
1 tsp. vanilla (optional)
½ cup sugar, or to taste
1 tsp. cinnamon

Directions:
Directions:
In a small saucepan over medium heat, combine water, 2½ tbsp. sugar, salt, and 2 tbsp. vegetable oil. Bring to a boil, and remove from heat. Stir in flour until mixture forms a ball.

Heat oil for frying in deep-fryer or deep skillet (1-inch deep) until it is very hot.

Pipe strips of dough into hot oil using a pastry bag or a ⅜-inch fluted tube.

Press the dough out in 4-inch strips. The fluted shape is essential, otherwise the pastries will turn out hard and doughy.

Reduce heat to medium and fry churros, turning once, until they just begin to turn golden brown. Drain on paper towels.

Roll drained churros in cinnamon and sugar mixture.
