10 lb lean venison
4 lbs pork fat
4 1/2 tbsp saltu
2 1/2 tbsp white pepper
5 tbsp sage
1 tbsp nutmeg
1 tbsp thyme
1 tsp ginger
2 tbsp crushed red pepper (or to taste)
2 cups cold water
cayenne pepper (optional if you want it hit)

Directions:

Mix all of the dry spices together in a plastic bag and set aside. Grind the venison and pork fat together into a large pan- such as a roaster pan. Sprinkle about half of spice mixture onto the ground meat and mix by hand. Then add the remaining spices and mix by hand. Then add the remaining spices and mix. This is a little difficult because of the consistency of the mixture. Add the water to the sausage which will make it easier to work with and thoroughly mix.
