3 tbsp olive oil
1 large onion, chopped
1 celery stalk, chopped
12 oz cooked sausage, sliced in 1/2" portions
1 bay leaf
1 small bunch kale (1/2 lb) cut into 3/4" ribbons
1 Tbsp red wine vinegar
1 large carrot thinly sliced
2 c chicken broth
1-1/2 c lentils (rinsed)
1/2 tsp dried red pepper
1-15 oz diced tomatoes with liquid
salt and black pepper to taste

Directions:
Directions:
Sauté onion, carrot and celery over med heat in a large soup pot. About 5 minutes. Add broth and water, sausage, lentils, bay leaf and pepper flakes. Bring to a boil, reduce and cook about 30 minutes (simmer covered)
Add kale and tomatoes to pot and cook uncovered over medium heat for 15 minutes, adjust liquid as needed.
Stir i vinegar and season with salt and pepper.
