1½ tsp. cooking oil
1 onion, diced
½ tbsp. ginger
2 garlic cloves, minced
1 Thai chili, deseeded and minced
1 lb. ground pork
3 tbsp. brown sugar
2 tbsp. fish sauce or soy sauce
1 tbsp. hoisin sauce
1 tbsp. sweet chili sauce

1 green onion, finely sliced
1 tomato, sliced
1 cucumber, sliced
1 jalapeño, sliced
½ small head of iceberg lettuce

Directions:

Heat oil in a large skillet over high heat.

Add the onion, ginger, garlic, and chili, and cook for 2 minutes.

Add the ground pork and cook for 2-3 minutes until mostly cooked, breaking up meat.

Add the sugar and sauces. Stir, then leave to cook without touching until juices cook out and pork begins to caramelize for 2-4 minutes. Then stir it and leave it again, without stirring for another minute or two to get more caramelization. Repeat once or twice to achieve the caramelization to your taste.

Serve over jasmine rice, vermicelli noodles, or in lettuce cups. Set out green onion, tomato, cucumber. jalapeño, and lettuce for garnish.
