Olive oil spray
1 lb Sea Scallops
1/4 cup Panko crumbs
1 1/2 TB grated Parmesan Cheese
1TB fresh minced parsley
1/4 t dried oregano
1/4 t salt (divided)
Black pepper to taste
Juice of 1 lemon divided
2 1/2 TB melted butter
1TB White wine

Directions:
Directions:
Preheat oven to 400 degrees
Lightly spray 2 qt baking dish with olive oil
Pat scallops dry
Place in baking dish
Lightly spray with olive oil
Season with a little salt
In a small bowl combine Panko, Parmesan, Parsley, Oregano, salt and pepper to taste
Arrange scallops in a single layer
Top with the crumb mixture
Whisk half of the lemon juice melted butter and wine together and pour over the scallops
Bake for 15’ or until scallops are opaque
Broil until topping is golden (2-3 minutes)
Squeeze remaining lemon over top of scallops
