½ cup (2 1/2 oz.) all-purpose flour
¼ cup walnuts, toasted and chopped coarse
¼ cup sugar
½ tsp. baking soda
1/8 tsp. salt
1 small very ripe banana, peeled and mashed well (1/4 cup)
1 large egg, room temperature
1 tbsp. unsalted butter, melted and cooled
1 tbsp. plain yogurt
½ tsp. vanilla extract

Adjust oven rack to middle position and heat oven to 350º. Grease 5 1/2" x 3" loaf pan. Whisk flour, walnuts, sugar, baking soda, and salt together. In separate bowl, whisk mashed banana, egg, melted butter, yogurt, and vanilla together until smooth. Gently fold banana mixture into flour mixture with rubber spatula until just combined. (Batter will be lumpy with a few spots of dry flour; do not overmix). Pour into prepared pan. Bake until loaf is golden brown and toothpick inserted in center comes out clean, 30 to 40 minutes, rotating pan halfway through baking. Let loaf cool in pan on wire rack for 5 minutes. Remove loaf from pan and let cool for at least 1 hour before serving.
