1 1/2 c yellow lentils soaked 8 hrs or overnight
2 tsp olive oil
1 lg onion diced
1 lb carrots diced
2 cloves garlic minced
2 inches fresh ginger minced
1 tsp cinnamon
1/8 c maple syrup (3 tbsp)
1 bay leaf
4 c vegetable stock
2 c water
salt and pepper to taste

Directions:
Directions:
Soak lentils for about 6 hours
Heat oil in a large pot on medium
Sauté onions and carrots about 5 minutes
Add ginger, garlic and cinnamon and cook for 2-3 minutes
Add all other ingredients and lentils, bring to a boil and reduce heat to simmer - 30 minutes
Before pureeing, make sure the lentils are soft.
Remove bay leaf, then puree soup with blender in batches.

Serve immediately.
