½ c. boiling water
1 tsp. baking soda
¼ c. Crisco ("I" use butter flavored)
½ c. sugar
1 egg
1 c. buttermilk
1¼ c. white or whole-wheat flour
Pinch of salt
1 c. 100% All-Bran cereal
½ c. 40% Bran flakes
¼ c. chopped walnuts
¼ c. dried cranberries (optional)

Directions:
Add soda to hot water and let cool. Whip shortening and sugar until light and fluffy. Add the egg. Mix well. Add buttermilk, flour, and salt and mix well. Add the soda water very slowly. Fold the cereals into the mixture very gently with the chopped nuts. Spoon into 12 greased muffin tins. Bake at 350º for 18 minutes or until brown.
