Ingredients: 6 medium boneless chicken breast 1 8 ounce swiss cheese, slices 1 8 ounce ham, cooked and sliced 6 tablespoon butter 1/2 cup Hollander's Vermouth white wine 1 teaspoon chicken stock base (Better than Bouillon) (Can add fresh minced garlic also) Italian season bread crumbs 3 eggs, beaten 1/2 cup milk (or as preferred) 1-2 tablespoon cornstarch 1 cup whipping cream

Directions:Clean then cut the chicken breast length wise. Spread chicken breast flat and place a slice of cheese and ham over one half of the chicken breast. Fold breast over and seal edges with toothpicks.
Beat eggs in bowl and add milk. Put bread crumbs in a separate bowl. Dip the chicken breast in the egg mixture and then coat with the bread crumbs.
In a large skillet, over medium heat, melt the butter. Cook the chicken until browned on all sides.
In a separate skillet add wine, bouillon, and garlic. Simmer until reduced about 50% and then add the whipping cream. Reduce heat to low. In separate bowl stir together the cornstarch with some whipping cream (enough shipping cream until mixture is smooth)
When satisfied with consistency of sauce, add the chicken breast and simmer for 30 minutes.
Top each chicken breast with slice of cheese
We double the sauce as we like extra. |
