For the chicken:
3 lbs fresh chicken tenderloins
1 ½ cups all purpose flour
1 tea salt
1 tea white pepper
For the egg wash:
3 eggs
2 cups milk
1/8 tea salt
1/8 tea white pepper

For the hot sauce:
1 cup cayenne pepper sauce. (Franks Louisiana Red Hot Brand)
½ cup clarified butter
1/8 tea cayenne pepper
1/8 tea white pepper
1/8 tea black pepper

Directions:

1. Lightly pound the tenderloins with a tenderizer

2. Pat dry

3. Make egg wash. Lightly heat the eggs, milk salt and pepper

4. Dredge each tenderloin in the flour and shake off the excess

5. Dip each one in the egg was, drain and dip into the breading mixture, coating thoroughly. Shake off excess and set aside. Continue until all chicken is breaded.

6. Heat enough vegetable oil to completely cover the chicken in a deep fryer or heavy pan to 350 degrees. Cook for approximately 4-5 minutes. Remove with a slotted spoon and place on paper towels to drain

7. Make hot sauce. Mix hot sauce ingredients in a large bowl.

8. Place the friend chicken tenderloins in the sauce and toss to coat each piece evenly. Drain the excess sauce from the chicken.

9. Serve on a bed of leaf lettuce with sticks of celery, carrots and bleu cheese
dressing for dipping.
