1 stick of soft butter
½ cup shortening
2 cups all-purpose flour
2 cups of sugar
5 eggs
1 tsp. baking soda
1 cup of buttermilk
1 T. vanilla
7 oz. package of coconut
1 cup chopped pecans

Cream Cheese Frosting:
8 oz. cream cheese
½ stick butter
1 box confectioners sugar
1 T vanilla

Directions:
Directions:
Mix butter and shortening; add sugar and beat well. Add eggs, one at a time. Add flour, baking soda, and buttermilk, alternately with sugar/ shortening mixture. Add vanilla, coconut and chopped pecans. Bake in 3- 9 inch pans for 40 minutes at 350º. Frosting: I like to double the icing recipe to have plenty. Soften cream cheese at room temperature. Beat until smooth with butter. Add confectioners sugar and vanilla. Beat until smooth. Add a few more chopped pecans into the frosting or sprinkle them on top. ***My Maw-Maw always made this growing up and I loved it, so I started baking it every year for Thanksgiving. I am Carolyn Lasseter Dean's daughter-in-law/ Betty Lasseter's granddaughter-in-law.
