⅔ c. uncooked cracked wheat (bulgur)
½ c. water
1 lb. ground beef
¼ c. evaporated milk or half & half
1 egg, slightly beaten
2 T. minced parsley (optional)
¼ c. minced onion
1 tsp. salt
⅛ tsp. ginger
Small dash of pepper
Small dash of nutmeg
2 T. butter
2 T. flour
1 c. condensed broth or 1 c. water and 1 beef bouillon cube

Directions:
Directions:
Soak cracked wheat overnight in ½ c. water; drain. Mix together meat, evaporated milk, soaked wheat, egg, parsley, minced onion, and spices. Shape into 1½ inch balls. In a skillet melt butter and stir in flour. Add broth a little at a time, stirring constantly to avoid lumps. Bring to a boil. Reduce heat. Add meat balls, cover, and simmer for 30 minutes. Turn the meatballs often and add more water if necessary.
