1 T. olive oil
1½ lb. chicken or turkey breasts
¼ onion, chopped
3 cans chicken broth
one 4 oz. can chopped chiles
1 tsp. garlic powder
1 tsp. cumin
½ tsp. oregano
½ T. cilantro
⅛ tsp. cayenne pepper
1 (15 oz.) can Northern white beans
1 (15 oz.) can hominy
1 (15 oz.) can white corn
1 (15 oz.) can garbanzo beans
Tortilla chips
White cheese (like Monterey Jack)
2 green onions, thinly sliced

Directions:

Cut chicken into 1 inch pieces. Heat oil in a 5 quart pot. Add chicken and onions and cook 4 to 5 minutes. Stir in broth, green chiles and spice blend. Simmer 15 minutes. Drain and stir in white beans, hominy, corn, and garbanzo beans and simmer 5 minutes more. Serve in bowls of top of tortilla chips. Garnish with white cheese and onions. Really yummy in the winter with corn bread. You can add more vegetables and broth to increase the number of servings.
