1 CUP FLOUR ( + SOME FOR THE ROLLING OUT)

With mom's recipe's you have to do some guessing, you know a little more, a little less!

Directions:

Mix ingredients adding more flour if needed to form a soft dough.
Knead on floured board adding just enough flour to keep the dough from sticking.

Roll out dough VERY THIN LIKE PAPER.
Let dry for a few minutes.

Starting at one side, carefully roll dough into a loose pencil shape and slice into very
narrow strips.
Once cut lift gently and fluff until they unroll. Let dry. Then cook or freeze.


TO COOK: Bring chicken broth to a boil, add 1 stick of butter and noodles.
reduce heat and cook until tender. You may have need to cook a potful
at a time.

Everyone looked forward to mom's homemade noodles. She was a great cook but could never tell you how. "just a little of this and a little of that until it's right."

This recipe was copied from her index cards for Susie Stephens. (my niece) It's brief, but it works.
