3⅓ c. sugar (2¼ c.)*
7½ c. milk (5 c.)*
6 c. heavy cream (4 c.)*
6¾ tsp. vanilla (4½ tsp.)*
¾ tsp. salt (½ tsp.)*

Recipe for 6 quarts, (for 4 quarts)*

For ice cream maker brine mixture for 6 qts. ice cream (4 qts.)* you will need:
- 25 lbs. ICE (20 lbs.)*
- 3½ to 7 c. ROCK SALT (2½ to 5 c.)*
-or- 3½ to 7 c. TABLE SALT (1½ to 3 c.)*

Add sugar gradually to beaten eggs. Continue to beat until mixture is very stiff. Add remaining ingredients and mix thoroughly. Pour into can and place dasher into mixing can and freeze/mix as directed.

Once placing can with dasher and starting the motor, begin adding 2" layers of crushed ice followed by sprinkling about 3 T. of salt uniformly over each layer. Continue adding 2" layers and 3 T. salt between each level until ice/salt layers reach the top of the rotating can. When adequately frozen, the motor will stop turning the can mixture, usually about 30 minutes.

- Prepare ice cream mixture as above and chill before pouring into mixing can.
- Prepare ice by crushing before (or use Sonic ice) -- the finer the ice, the smoother the texture of the ice cream

FRESH FRUIT ICE CREAM.
Substitute 6 c. pureed and sweetened fresh fruit (peaches, strawberries, raspberries) or three -12 oz. packages frozen fruit (thawed and smashed), for 6 c. milk.
Reduce sugar to 2-1/2 c.
Use 1-1/2 tsp. vanilla
Use 2-1/4 tsp. almond if desired
