50 oz frozen chopped spinach
10 T butter
5 T flour
5 T chopped onion
1¼ cup evaporated milk
1¼ cup vegetable liquor (water/liquid from the spinach)
1¼ tsp black pepper
2 tsp celery salt
2 tsp garlic salt
14 oz velveeta cheese
18 oz pepper jack cheese
2½ tsp worcestershire

Directions:
Cook spinach. Drain and reserve liquor (liquid). Melt butter in saucepan over low heat. Add flour, stirring until blended and smooth, but not brown. Add onion and cook until soft but not brown. Add liquid slowly, stirring constantly to avoid lumps. Cook until smooth and thick; continue stirring. Add seasonings and cheese which has been cut into small pieces. Stir until melted. Add cooked and drained spinach (blot with paper towel to get as much liquid as possible out of the spinach.) Put into a casserole 11x14 and top with bread crumbs.

**This dish is better if made the day before and refrigerated overnight.

Bake at 350º for 30-45 minutes or until bubbly.
