2 T. canola oil
1 lb. ground turkey
1 T. minced garlic
1½ T. fresh ginger, finely grated
¾ c. finely diced onions
1 tsp. sriracha
2 T. honey
¼ c. hoisin sauce
2½ T. soy sauce
1 T. seasoned rice vinegar
one 8-ounce can water chestnuts, drained and chopped
⅓ c. thinly sliced green onions
8 lettuce leaves
Pinch salt

Heat oil in large skillet over medium-high heat. Add turkey, garlic, ginger and onions. Cook until lightly browned and drain. Stir in sriracha, honey, hoisin, soy and rice vinegar. Bring to boil, reduce heat, and simmer for 5-8 minutes or until filling is soupy. Fold in water chestnuts and green onions.
Arrange 2 lettuce cups on each plate. Divide turkey filling among the lettuce cups. Garnish with fried rice noodles, if desired.
