(3) 8 oz pkg cream cheese
3/4 cup sugar
3 eggs, separated
2 dozen graham crackers
1 stick butter

Topping:
1 8 oz. carton sour cream
4 tablespoons of sugar
3 teaspoons of vanilla

Directions:
Directions:
Separate the eggs and beat the egg yolks. Add to the cream cheese and sugar. Beat the egg whites until stiff and fold into cheese mixture. Pulse graham crackers in food processor and add one stick of melted butter. Butter a spring form pan and line with the graham cracker crumbs. Press firmly into the bottom and/or sides of pan with the bottom of a measuring cup to make crust really tight. Pour cheese mixture into pan and bake 25-30 minutes in 350º oven. Let cool. Mix the sour cream, sugar and vanilla together and pour over cake. Cook at 400º for ten minutes. Let cool and remove from pan.

This is the easiest cheesecake and so good. The recipe came from Frances Neighbours, Judy's Uncle Jim's wife from Tulsa. Judy used to make them for my dad Hutch to sell to The Pawnbroker restaurant where he worked in Tucson!
