Fried Shrimp Recipe

2 c all-purpose flour
1½ tsp baking powder
1 tsp salt
1 tsp black pepper
3 eggs, whisked (alternately use 1 c buttermilk)
4 c vegetable oil, for frying
2lb medium raw shrimp, peeled and deveined

Directions:
Directions:
1.In shallow bowl, combine flour, baking powder, salt and black pepper. In separate bowl, place whisked eggs (or buttermilk.)
2. Pour oil into large pot or cast iron skillet and heat to between 350º-375ºF.
3. While oil preheats, prepare shrimp. Pat shrimp dry and dredge in flour mixture first, then coat with egg/ buttermilk, and dredge in flour again. Shake off shrimp after each step to remove excess flour/liquid. Set on wire rack or parchment lined tray until ready to fry.
4. Working in batches, fry shrimp until golden brown, about 3 minutes. Use a slotted spoon to transfer to paper-towel lined tray. You may need to adjust heat to ensure oil maintains proper temperature range.

Enjoy plain, or dipped in cocktail sauce or tartar sauce
