6 Peeled and chopped potatoes
½ Cup of finely chopped white onions
½ Cup of finely chopped red and green peppers
1 Tablespoon of minced garlic
1 Can of Rotel diced tomatoes (Medium)
2 Tablespoons of Virgin olive oil
2 Cups of Water
½ Shredded sharp cheese (Optional)

Directions:
Directions:
Heat a skillet over Medium to High. Add Virgin Oil; let heat for 2 to 3 minutes. Add onions, peppers, and minced garlic; let saute for about 10 minutes. Add potatoes; let brown. Once potatoes are slightly browned add Rotel and 2 Cups of water. Let simmer for about 15 minutes covered with a lid on. Add Cheese (optional) The Best!
