3 cups boiling water
4 cups chopped parsley (2 big handfuls)
2 tbsp lemon juice
1 3/4 oz powdered fruit pectin
3 3/4 cups sugar
2 drops green food coloring

Directions:
Directions:
Put parsley in a bowl and pour boiling water over top and cover. Let stand for 1/2 hour. Strain through cheesecloth. Use 3 cups of the parsley juice along with lemon juice and pectin in saucepan. Cook and stir over high heat until it reaches a rolling boil. Put in the sugar, all at one time and continue stirring. Mix in food coloring. Bring to a hard boil for one minute and then, pour into sterilized jars and seal.
