2 ducks (field dressed and clean)
5 jonathan apples
12 bacon strips
1 cup raisins
pinch of salt and pepper

Directions:
Directions:
Season ducks with salt and pepper inside and out. Don't peel apples, quarter them, and place some apples and some raisins inside each duck. Place ducks in a roasting pan and put the rest of the apples and raisins around the ducks. Add any spices you favor. Place bacon strips on each duck. Pour 1 to 1 1/2 cups water into the pan. Bake at 350 degrees until tender. Add more water if needed.

Apple Stuffing for Duck:
3 cups bread crumbs
1 Jonathan Apple (diced)
1 onion (chopped fine)
3 tbsp butter (melted)
1 tsp salt
1/2 cup raisins
Combine the ingredients with enough water to moisten. Stuff duck and arrange the surplus around the duck in the pan.
