¼ lb. or 2 medium red potatoes
¼ lb. sliced bacon cut crosswise into ¼" strips
1 cup chopped green onions
½ cup fresh or frozen corn
2 cloves garlic, finely chopped
½ tsp. thyme
1 bay leaf
pinch dry red pepper flakes
1½ cups soy milk
1 ¾ lb. piece of salmon, skin removed & cut into 1" pieces
¼ tsp salt
⅛ tsp. pepper
1 Tbsp. flour in ¼ cup water

Cut potatoes in ½" cubes & cook in salted water for 8 - 10 minutes. Drain and set aside. Cook bacon in a pot until crisp. Transfer to a paper towel to drain.Cook onions in up to 1 Tbsp. of bacon fat or oil with the corn, garlic, thyme, bay leaf & red pepper flakes over moderately low heat, stirring occasionally, until tender, about 5 min. Add milk and bring just to a boil (do not let it boil). Reduce heat to moderately low and add potatoes, salmon, bacon, salt & pepper, cook gently stirring occasionally until salmon is just cooked through. Stir in flour and water mixture to thicken the broth. Remove from heat & serve.
