1 unbaked pie dough (I like Pillsbury)
1 16 oz. can pumpkin (about 2 cups)
1 14 oz. can sweetened condensed milk (not evaporated)
2 eggs
1tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/2 tsp salt

Directions:
Preheat oven to 425 degrees. Prepare the pie dough in pie plate. In a large bowl, combine all of the ingredients. Mix well. Pour into the pie shell. Bake 15 minutes. Reduce the oven temperature to 350 degrees; continue baking for 35 - 45 minutes or until knife inserted 1 inch from the edge comes out clean. Cool. Top with whipped cream. Serve.

For Pumpkin Pie with Streusel topping. In medium bowl, combine 1/2 cup firmly packed brown sugar and 1/2 cup flour. Add 1/4 cup cold butter and mix until crumbly. Stir in 1/4 cup chopped nuts. After 30 minutes of baking at 350 degrees, sprinkle on top of the pie; bake 20 minutes longer or until golden. Top with whipped cream. Serve.
