2 cups Scotch oatmeal
1/2 cup suet
1/2 cup onions chopped fine
1 tsp salt
1/4 tsp pepper
1/2 cup hot water

Mix all ingredients together. Will be a bit sticky. Stuff goose and roast as usual.

This is my Nanny, Giles (nee Allen) Rickard's recipe. Traditionally my Dad grew up having turkey dinner for Christmas and goose for New Year's Dinner. My Mom would make the goose to please him, although she said it was a little small and very fatty. She made good use of the fat that she drained off to fry our french fries in...and they were delicious! Grampa George Rickard was English and Nanny Giles was a Scot, hence the haggis stuffing.
