1 cup flour
1/4 tsp salt
2 eggs
1 cup milk
roast fat drippings or butter

Directions:
Directions:
Stir flour and salt together. Beat eggs until thick and combine with milk. Make a well in centre of dry ingredients and gradually stir in milk and egg mixture. Beat until batter is smooth, about 2 minutes at low speed. Pour 2 tablespoons of roast drippings or butter into shallow 9 inch pan or muffin tin. Heat in hot oven 450º until almost smoking hot, then pour in batter 1/2 inch deep and bake 20 minutes until puffed and brown, gradually lowering temperature to 350º for remainder of baking time, approx 15 minutes. Make 1 9 inch square pan or 12 muffins.
