4 thawed chicken breasts
Veggies:
Carrots, potatoes, celery, bell pepper, etc.
2 cans coconut milk (1 can if no potatoes)
1½ tsp. salt
1 tsp. curry
½ tsp. turmeric
¼ tsp. cayenne pepper (add for spicy)

Thickening:
2 tbsp. water
2 tbsp. corn starch
2 tbsp. lime juice

Directions:

Stove-Top
1. Cube thawed chicken breasts.
2. Heat 1-2 tbsp. of oil and begin to sauté chicken.
3. Add cut veggies to chicken and sauté.
4. Add spices to chicken and veggies.
5. Pour coconut milk on top.
6. Let simmer.
7. Add thickening ingredients prior to serving.
8. Serve over rice.

Crock-Pot
1. Mix together sauce and pour over chicken in crock pot. Cook 4-5 hours. on
high or 8 hours on low.
2. Slightly shred chicken.
3. About 30 minutes begore serving add thickening ingredients to crock pot.
4. Serve over rice.
