1 onion, diced
1 tbsp. olive oil
4 cloves of garlic, minced
2 cups marinara sauce
1 cup beef broth
1 tbsp. balsamic vinegar
1 tbsp. Italian Seasoning (or equivalent of Oregano, Basil, and Rosemary)

Bell Peppers:
4 large green bell peppers, halved and seeded
1 cup cooked white or brown rice or polenta
1 lb. ground beef or ground turkey
½ lb. ground pork
1 10-oz. can of diced tomatoes
1 cup grated Parmesan cheese
2 tsp. salt
1 tsp. ground black pepper
2 tbsp. Italian seasoning (or equivalent of Oregano, Basil, and Rosemary)
2 tbsp. parsley

Preheat the oven to 375ºF.

Cook onion in olive oil over medium heat until onion begins to soften. Add the minced garlic and cook for one minute.

Transfer half of the cooked onion/garlic to a large bowl. Stir in the marinara sauce, broth, vinegar, and seasonings to the skillet; cook while stirring for two minutes.

Pour half the sauce mixture into a 9x13 baking dish.

Combine ground beef/turkey, ground pork, tomatoes, Parmesan, rice/polenta, and seasonings into bowl with cooked onion. Mix well. Stuff bell peppers with mixture.

Place stuffed green bell pepper halves in the prepared baking dish.

Top with remaining sauce mixture, and sprinkle with extra parmesan cheese.

Cover dish with aluminum foil, and cook in preheated oven for 30 minutes.

Remove aluminum foil and cook an additional 25 minutes, until meat is no longer pink, peppers are tender, and cheese is melted.
