1 Tbsp oil
8 oz. boneless chicken breast cut into cubes
⅓ cup chopped onion
⅓ cup chopped carrots
⅓ cup chopped celery
1 ½ Tbsp flour
Pinch dried thyme or sage
1½ cups chicken stock
¼ cup frozen peas or corn
Salt & pepper to taste

Directions:
Heat oil in large skillet over med. heat. Add chicken & brown all sides. Add onion, carrots & celery and cook a few minutes. Stir in flour and thyme or sage. Slowly mix in stock, stirring constantly. Bring a gentle simmer until vegetables are tender & chicken is cooked through about 15 min. Add peas or corn and heat through. Season with salt & pepper.
