Ingredients:  
4 tilapia fillets (can sub other white fish)
1 6oz can lump crab meat
2 red bell peppers, cut in thick slices
2 small zucchinis, cut in ½" discs
2 small yellow squashes, cut into ½" discs
4 Tbsp butter
1 lemon, quartered
paprika
salt and pepper to taste
(alternatively season with Old Bay)
4 large pieces of heavy duty tin foil


Directions:

1. Preheat oven to 400ºF
2 Cut slit in tilapia fillets to create a pocket. Stuff with crab meat and place each fillet on a separate piece of foil. Top with 1 Tbsp butter and a squeeze of lemon. Season with paprika, salt and pepper to taste, or alternatively use Old Bay seasoning.
3. Evenly divide vegetables amongst foil. Fold up foil and crimp to seal.
4. Place foil packs on baking tray and cook for 15-20 minutes, or until fish easily flakes.
