Curry Veggie Fried Rice Recipe

5 oz jasmine rice

1 large clove of garlic, minced

2 oz snow peas

1 oz soy sauce

1 T curry powder

5 oz peas

2 large eggs

1 T apple cider or white wine vinegar.

1 tsp sugar

6 T vegetable oil

Directions:
Directions:
Add rice to boiling water and cook stirring occasionally for about 12 minutes.

Drain rice, rinse with cold water, drain again.

Whisk 2 eggs in a small bowl.

In 2nd small bowl combine soy, curry powder, vinegar, and sugar.

Whisk until sugar is dissolved.

Heat 2 T oil in large skillet and add eggs, cooking until set. Remove from pan.

Roll omelet up and cut crosswise into ½ ribbons.

Heat 2 T of oil in same skillet, add peas and snow peas.

Stir fry until lightly browned, then add garlic. Remove from pan.

Add 2 T oil to same pan and heat. Add cooked rice and fry.

Press down to allow rice to crisp, about 3-4 minutes.

Add soy mixture , cook, tossing frequently until liquid is absorbed, about 2 minutes.

Remove from heat, stir in vegetables and top with sliced omelet.
