3 cups crushed raspberries
5¼ cups granulated sugar
1 box Certo (crystals)

Mix prepared fruit and sugar in a large bowl. Let stand 10 minutes to dissolve sugar. Combine ¾ cup water with Certo crystals and bring to a boil and cook for one minute stirring constantly. Add to fruit mixture and stir for 3 minutes. Fill jam jars or containers to ¼ inch from the top. Let stand for 24 hours and refrigerate or freeze till ready to use. ½

I like to use organic berries and sugar. The sugar takes longer to dissolve. Try to get as fine as possible or blitz it in a grinder. Yes, it’s more sugar than fruit but keep in mind, you don’t need that much on a piece of toast or whatever. The flavour is totally worth it.
