Yankee French Bread Recipe

7 cups Unbleached Flour
1 TB Salt
1 tsp Quick-Rise Yeast
2 cups Water

Directions:
Put a dough hook in a large mixer. Add flour, salt, and yeast. Turn on machine and drizzle in water until smooth dough forms.

If mixing by hand, use a large NON metal bowl, mix in flour, salt and yeast. Add water gradually, mixing with your hands. You'll end up with a gooey paste. Place on a floured surface and knead until dough is smooth and elastic.

Place dough in a large bowl. Cover with plastic wrap and drape with a towel. Let stand overnight.

To bake, preheat oven 450º. Place a pie pan containing water on a low shelf in oven. Cut dough into three pieces and roll them into logs on a floured surface. Place loaves on a wooden cutting board covered with cornmeal. Drape a towel over loaves and let stand for 10 minutes. Place the loaves in the oven on a cookie sheet lightly covered with cornmeal. Bake 15 minutes; rotate loaves and bake another 10 minutes. Let cool. Eat with soup or anything.

Our Home Teacher in Oklahoma was asked by the Bishop to find a bread recipe that only used simple ingredients from food storage. He brought us this bread many times. It is simple and tasty. It is also quick and easy, except the waiting overnight to cook it.
