3 ripe peeled medium-large bananas
¾ cup brown sugar, slightly heaped
½ cup margarine
1 egg
⅓ cup fat free sour cream
1 tsp vanilla extract
2 ⅓ cup flour
1 tsp heaping baking powder
¼ tsp baking soda
½ tsp salt
½ tsp heaping ground cinnamon

Directions:

Preheat oven to 350º. With a potato masher mash bananas leaving it with lumps.
Beat sugar and margarine until fluffy. Beat in egg, then add in all wet ingredients and mix. Slowly add in all dry ingredients. Put muffin wax cups in pan, fill muffin cups ¾ full and bake 15-18 minutes. Remove from muffin tins and cool. They are amazing with cream cheese frosting.
