5 lbs ground beef
5 rounded tsp Morton's Tender quick salt
2 1/2 tsp mustard seed
2 1/2 tsp course ground pepper
2 1/2 tsp garlic salt
1 tsp hickory smoked salt

Directions:
Directions:
1st Day: Mix all ingredients in large bowl and refrigerate
2nd Day: Mix by hand and refrigerate
3rd Day: Mix by hand and refrigerate
4th Day: Form into 5 rolls. Place on rack of broiler pan. Put in 140º oven on bottom rack and bake for 8 hours turning every 2 hours. It doesn't fall apart and forms it's own casing. When baking, put a cloth doubled over in oven door to hold it open for moisture to escape.
