3 c raw lentils (rinsed)
7 c water or stock
2 tsp salt

Sauté
2 tsp minced garlic
1 c minced celery
1 c chopped onion
1 c chopped carrots

Add to soup 30 minutes before serving:
Black pepper
oregano
basil
thyme
1-1/2 c chopped fresh tomatoes
2 tbsp dry red wine
2 tbsp lemon juice
1-2 tbsp molasses or brown sugar
1 tbsp wine vinegar

Directions:
Directions:
Mix the first 3 ingredients and simmer, covered for 3-4 hours.
Sauté the next ingredients and add to the lentils after they have simmered 3-4 hours. Continue to simmer on low heat.
Add the next ingredients to the soup 30 minutes before serving.

Sprinkle with extra vinegar and freshly chopped scallions when serving.
