12 oz linguine
15 oz diced tomatoes
1/2 c sun dried tomatoes
1 sweet onion
4 cloves garlic thinly sliced
1/2 tsp red pepper flakes
2 tbsp olive oil
1-2 tsp salt
fresh black pepper
2 tsp dried oregano leaves
handful of fresh basil chopped
handful of fresh spinach
4-1/2 c vegetable broth

Directions:
Directions:
Put the pasta, tomatoes, sun dried tomatoes, onion, garlic into a large stock pot. Pour vegetable broth into the pot. Add the pepper flakes and oregano on top. Drizzle with olive oil. Add 1/2 tsp salt and some ground pepper. Cover the pot and bring to a boil. Reduce to a low simmer and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all the liquid has evaporated and there is about one inch of liquid left in the pot. Add the spinach and basil and cook another 7 to 8 minutes.
