12 oz. Cornmeal
3 oz. Wheat Flour
1 cup Sour Curd
1 tsp Turmeric powder
1 tsp Red Chilli powder
2 tsp Salt
2 tsp Pickle masala
3 tbsp Jaggery powder
2 tbsp Oil

Oil for frying

1. Mix all ingredients and make dough.
2. Cover dough and rest it for 1-2 hr.
3. Mix dough again with your hand and make it soft dough.
3. Now, grease your palm with oil and make 1 to 1.5 inch disc shape flat rounds.
4. Heat oil in pan, add Vada and fry on medium.
5. Add few vada at a time and fry them light brown each side.
6. Drain on a paper towel and store in airtight container.
7. Makai vada can be enjoyed hot or cold with a cup of tea.

Sabarkantha, North Gujarat grows lots of corn and this recipe is from my grandmother and her mom. Monsoons and deep-fried foods are a match made in heaven. Gosh, I miss Indian monsoons 😞… I enjoyed filing milk into vada (like pani poori) while growing up. Vadas especially designed to last few days so we use to take during travel. - Mom
