Chicken Corn Potato Chowder Recipe

Ingredients: 1 tablespoon butter ¼ pound bacon diced 1 cup Chopped onion ¾ cup chopped green pepper 1 tablespoon minced garlic salt and pepper to taste 2 tablespoons flour 4 cups chicken broth or stock 4 cups peeled and finely diced all purpose potatoes 1 ½ cups chopped carrots 2 cups fresh or frozen corn 1 cup half and half ½ teaspoon dried thyme Pinch of cayenne pepper 1 teaspoon chopped parsley 4 chicken breasts chopped in bite size pieces

Directions:Sling butter into a large stock pot and melt over medium heat. Add bacon to pan and cook until crisp.. Scoop out bacon and drain on paper towel and don't nibble too much. Add in chopped chicken breast and cook until no longer pink and remove from pan. Add onions and peppers. Cook until soft and then throw in garlic stirring for one minute. Stir in flour and stir into veggies. Dump in the broth and potatoes. Cover the pot and let boil then reduce to simmer about 12 more minutes or until. potatoes are tender ( you may also transfer to a crockpot and let steep on med low ). Add in carrots and corn and cover again simmering for 10 minutes more.(if in crock pot put in with potatoes). 15 minutes before serving add in half and half and season with thyme, cayenne, parsley and bacon. Give one last stir and serve. |
