1 c fresh mushrooms, sliced
3-4 ibs lamb cut into cubes
2 tbsp vegetable oil
1 large onion, chopped
4 cloves garlic, minced
1 c canned, peeled tomatoes, chopped
1 tbsp tomato paste
1 c dry white wine
4 carrots, sliced
3 strips orange peel
1/2 tsp thyme
Salt and pepper to taste

Brown the lamb in the veg oil over medium heat. Remove the browned meat from the stew pot and pour off the fat. Saute the onions, and garlic until soft. Add the tomatoes, paste and wine. Scrape up the bits left over from the browned meat. Add the meat and remainder of the ingredients to the pot and bring to a boil, turning down to a simmer. Cover and cook for 2 hrs.
