4 thin sliced chicken breast
2 tsp kosher salt, divided
1 tsp. black pepper, divided
2 large eggs, beaten
2 cups panko
Vegetable oil for frying
1 can diced tomatoes drained
3/4 tsp. salt
8 oz fresh mozzarella cheese sliced
1/4 cup basil

Directions:
-season chicken breast w 1/2 tsp of salt & pepper
-beat eggs w/ 1/2 tsp. of salt & 1/4 tsp. pepper in a shallow dish
-stir together panko, 1/2 tsp. salt and remaining 1/4 tsp. pepper in a separate dish
-dip chicken breast in eggs, turn to coat, letting excess drip off
-dredge chicken in panko, pressing gently to adhere
-fill a large heavy bottom skillet w/ 1/2 inch oil
-add chicken to oil, turning once & adjusting heat so oil is sizzling but not smoking until golden brown & cooked through. about 3 min. each side
-transfer chicken to a wire rack
-preheat broiler to high with oven rack at the highest setting
-arrange chicken in a single layer on a wire rack set inside a rimmed baking sheet
-drain diced tomatoes
-transfer tomatoes to a bowl & stir in salt -spoon over chicken
-top with mozzarella & basil
-broil until cheese is melted and bubbly (2-3 min.)
-remove from oven
