1 1/2 pounds boneless, skinless chicken breasts
2 (14oz) cans fire-roasted diced tomatoes
1 (8oz) can tomato sauce
1 (14oz) can corn, rinsed and drained
1 (14oz) can black beans, rinsed and drained
1/2 (8oz) package reduced-fat cream cheese
1 cup chicken broth
1 red bell pepper, finely chopped
1 jalapeno, seeds and ribs removed, minced
1/2 yellow onion, finely chopped
3 cloves garlic, minced
3/4 tablespoon ground cumin
1 1/2 teaspoons chili powder
1 teaspoon dried oregano
salt and pepper to taste.

Directions:
Directions:
Place chicken breasts and chicken broth in crock pot.
Add tomatoes, tomato sauce, beans, corn, bell pepper, onion, jalapeno and garlic. Season with cumin, chili powder, oregano, salt and pepper.
Cook on high for 3 hours.
Remove chicken breasts from crock pot and shred into small pieces.
Return to crock pot and add cream cheese, stir.
Continue to cook on high for an additional 15-20 minutes. Serves 8.
